Skillet Grilled Cheese

Crisp, buttery bread and cheese that melts all the way through.

The short version. Butter the outside of two slices of bread, fill with two kinds of cheese, and cook in a skillet over medium-low heat for 3 to 4 minutes per side with a lid on for the last minute so the cheese melts fully.

Scaling is exact math. For a fraction of an egg, beat the egg and measure out that fraction.

Ingredients

Sandwich

  • 2 slices sandwich bread
  • 1 tbsp butter (soft, for the outside of the bread)
  • 2 slices American cheese
  • ¼ cup shredded sharp cheddar

Directions

  1. Spread the soft butter on one side of each slice of bread.
  2. Set one slice butter side down in a cold skillet. Layer the American cheese and cheddar on top, then add the second slice, butter side up.
  3. Turn the heat to medium-low. Cook for 3 to 4 minutes until the bottom is deep golden.
  4. Flip, cover with a lid, and cook another 3 to 4 minutes until the second side is golden and the cheese is melted.
  5. Rest for a minute, cut in half, and eat while it is hot.

Tips

  • Low and slow beats hot and fast. High heat burns the bread before the cheese melts.
  • American cheese melts smoothly and sharp cheddar adds flavor. The pair beats either one alone.

Questions

Should I use butter or mayonnaise on the outside?

Either works. Butter gives the classic flavor. Mayonnaise browns very evenly because it has a higher smoke point than butter.
