What is brown butter?
The short answer. Brown butter is butter cooked until its milk solids toast, turning it amber and giving it a nutty smell.
Melt butter over medium heat. It foams, then the foam settles and the solids at the bottom turn golden brown. Pull it off the heat as soon as it smells nutty, because it burns quickly.
It adds depth to sauces, vegetables, fish and baking.

Can I use salted butter?
Yes, but unsalted gives you control over the seasoning, since the flavor concentrates as it cooks.
