What is the difference between kosher salt and table salt?
The short answer. Kosher salt has larger, flakier crystals than table salt, so a teaspoon of kosher salt contains less salt than a teaspoon of table salt.
Brands of kosher salt also differ from each other by volume. When a recipe says kosher salt and you only have table salt, use less, and taste.
Chefs like kosher salt because the crystals are easy to pinch and sprinkle evenly, which is why it is used on the skin of a roast chicken.

Can I swap them one for one?
Not by volume. Table salt is denser, so use about half to three quarters as much depending on the brand of kosher salt, then adjust to taste.
