How do you use an instant-read thermometer?
The short answer. Insert the probe into the center of the thickest part of the food, avoiding bone, and wait for the number to stop moving.
Check a few spots in a big roast. For a whole chicken, test the thickest part of the thigh. For thin steaks and fish, slide the probe in from the side.
Calibrate occasionally in a glass of ice water, which should read 32 degrees Fahrenheit. Wash the probe between uses.
