How do you make a buttermilk substitute?

The short answer. Stir one tablespoon of lemon juice or white vinegar into one cup of milk and let it sit for about 5 minutes until it thickens slightly.

The acid sours the milk, which works for the tang and the chemistry in biscuits and pancakes.

It is close to, but not identical to, real cultured buttermilk. Use real buttermilk when you can.

Can I use plant milk?

Soy and some other plant milks curdle with acid in a similar way. Results vary.
