How do you know when dough is kneaded enough?
The short answer. Dough is kneaded enough when it is smooth and elastic and a small piece stretches thin without tearing, called the windowpane test.
Kneading builds gluten, which gives bread its structure. Hand kneading takes several minutes of pushing, folding and turning.
The dough should feel slightly tacky but not stick to your hands. Add flour a spoonful at a time if it is too wet.

Can I over-knead by hand?
It is very hard to do by hand. Over-kneading is more of a risk with a stand mixer.
